Best Ever B.A.C Salad

This week’s theme: Salads!

I am so excited to finally post my first recipe to share with all of you. Since the first meal I ever made was a salad, I decided to go back to my roots with this Best Ever B.A.C Salad.
B – BACON
A – AVOCADO
C – CHICKEN (Lemon Pepper)
(Salads are not usually the best BUT what could be better than bacon, avocado, and chicken?)

**Ingredients for the Salad:
– 1 whole Avocado
– 1 cup sliced Baby Tomatoes
– 5-6 slices of Bacon
– 2 Chicken Breasts
– Dressing (personal preference)
– Drizzle of Lemon Juice
– 4-8 cups of Lettuce (personal preference)

Ingredients for Lemon Pepper Chicken:
– 1/8 tsp. Salt
– 1/8 tsp. Pepper
– 1 tsp. Garlic Powder
– 1/4 tsp. Onion Powder
– Juice from a Half Lemon
– Dash of Parsley

Directions for Chicken:
1. Chop chicken into strips
2. Season with salt, pepper, garlic powder, juice of half a lemon, and dash of parsley
3. Set pan to medium – high heat and dash of cooking oil
4. Once pan is warm, place chicken in pan and allow to cook for 10-15 minutes (depending on size of strips and heat)
5. Once chicken is crispy and golden, and no more pink is visible, let cool

Directions for Salad:
1. Crisp the bacon
2. Allow chicken and bacon to cool before adding to salad
3. Chop lettuce, tomato, and avocado into desired pieces
4. In a large bowl, combine avocado, lettuce, and tomatoes, drizzle with lemon juice
5. Add the cooled chicken to the salad and toss with desired dressing (I used a greek yogurt Cesar dressing)
6. Crumble the crispy bacon on top and add a little extra salt or pepper for flavor (I personally added red pepper flakes)
7. Enjoy the Best Ever B.A.C Salad

**Extras:
If the salad is a little boring, I GET IT.
Here’s what you can add:
– FLAVOR (Suggested: Red Pepper Flakes, Cheese (Parmesan, Mozzarella, Bleu Cheese), Red Onion, Grilled Onion)
– TEXTURE (Suggested: Croutons, Roasted Chickpeas, Spinach, Kale, Crunchy Onion Pieces)
– ZEST (Suggested: Honey Mustard, Avocado Dressing, Lemon Vinaigrette, Cesar Dressing)
