Blueberry, Bananas, and Breakfast (Yum!)

Breakfast is not only the most important meal of the day, but is also my FAVORITE meal of the day. I am NOT a morning person, but if I plan to make breakfast it makes getting out of bed less painful.
I have included 3 of my go-to recipes for when you have time to spend in the kitchen and need a little extra Monday motivation (or any day for that matter)

  1. Oatomotes (Oatmeal)
  2. Yummy Yogurt Bowl
  3. Awesome Avocado Toast

Oatomotes (Name courtesy of my little brother)
– 1/4 – 1/3 cup Steel-Cut Oats (Depending on hunger level)
– 1 Scoop of Protein Powder (I use chocolate and this is optional)
– 1/4 cup Almond Milk
– Drizzle of Honey
– 1 Banana

1. Add oats to microwave safe bowl. Add scoop of protein and mix well
2. Add enough water to barely cover oats. Mix again
3. Place in microwave, cook on high for 1 minute. Pause and stir. Cook for 1 minute more
4. Once done, oats should appear fluffy
5. Add almond milk and drizzle of honey
6. Top with sliced banana and enjoy

This is a perfect breakfast whether you have time at home or need to make breakfast at the office. (Sometimes I make this at the office on my 10-minute break)

Yummy Yogurt Bowl
– 1/2 cup Greek Yogurt (I use vanilla)
– 1/4 cup Granola
– 1 Scoop of Protein (I use vanilla)
– Handful of Blueberries
– Dash of Cinnamon

1. In your favorite bowl, add yogurt and protein. Mix well
2. Once mixed, add blueberries and granola (and dash of cinnamon if desired)
3. Enjoy the ease of preparation and nutritional benefits

Awesome Avocado Toast
– 1 slice Whole Wheat Toast
– 1/4 Avocado
– Sprinkle of Red Pepper Flakes
– Dash of Salt and Pepper
– Dash of Chili Powder
– 2 Eggs

1. Heat skillet over medium-high heat. Add drizzle of olive oil
2. Add piece(s) of bread to toaster and toast to desired toastiness (3 – 4 minutes)
3. While bread is toasting, crack two eggs into preheated skillet
4. Allow eggs to cook to desired consistency (I prefer over-hard, which is about 8 – 10 minutes)
5. While eggs finish cooking, mash avocado on finished piece of toast
6. Add salt, pepper, chili powder, and red pepper flakes
7. Add eggs to seasoned toast
8. Enjoy

Added ZEST:
For the Oatomotes: This is my go-to because I love banana, chocolate, and peanut butter.
Other popular variations: honey, blueberries, and vanilla protein; strawberries, honey, and vanilla protein; orange, honey, and cinnamon; almonds, honey, and cinnamon…
For the Yummy Yogurt: This breakfast is so easy, so yummy, and so filling! It is also easily able to be prepped the night before and just grab and go. (Protein is optional)
Other popular variations: banana and peanut butter; raspberries and Nutella; banana, peanut butter, and Milo; orange, mint, and honey; almonds and honey…
For the Avocado Toast: The perfect meal for when there is time to spare and savory is the desired option. I make mine spicy, but if you do not like spice:
Add ginger, drizzle of lime, and salt; salt and pepper; drizzle lime and salt; onion powder, garlic powder, and salt…

I hope these breakfast recipes helped motivate you to get out of bed, or at least inspire you to eat breakfast.
I notice when I eat a fulfilling and nutritional breakfast, I tend to be more ready to say good morning to everyone in the office.
