PB Banana Eggless Muffins
Servings 12 Muffins

Ingredients
- 2 + 1/4 c. Flour
- 1 tsp. Baking Powder
- 1/2 tsp. Baking Soda
- 1/2 c. White Sugar
- 1/2 c. Brown Sugar
- 1/2 tsp. Cinnamon
- 1 tbsp. Peanut Butter
- 2 Mashed Bananas
- 1 c. Greek Yogurt
- 1/2 c. Oil
- 1/2 c. Milk
- 1 tsp. Vanilla
Instructions
- Preheat oven to 220° C (480° F). Spray muffin tin with cooking oil
- In a large bowl, mash bananas. Add the wet ingredients (greek yogurt, milk, peanut butter, vanilla, and oil). Set aside
- In a small bowl, add the dry ingredients (cinnamon, both sugars, flour, baking powder, baking soda). And whisk to combine
- Add the dry ingredients into the wet ingredients, mixing throughly with a rubber spatula or wooden spoon (do not overmix)
- Scoop about 1/4 c. of batter into the muffin tins (If you want, add more peanut butter to the top)
- Place in oven and cook for 5 minutes – then immediately lower the heat to 175° C (350° F)
- Remove from heat once the muffins are golden brown and cooked through
- Let cool slightly before devouring
