Buffalo Chicken Cheese Toastie


Decided to switch it up very last minute and try some comfort food. After this week’s experiment with Green Chef, we had: Steak Shawarma Salad, Yellow Curry Soup, and a Roasted Cod with Gremolata. (It was going to be hard to top that)
Each recipe was uniquely difficult and time-consuming so it was difficult to write a blog, and take pictures, and prepare a decent meal all at once.
So tonight’s meal is a bit of a cop-out (sorry)

BUT HERE WE GO: Buffalo Chicken Cheese Toastie
(/ˈtōstΔ“/ : noun. Australian word for Grilled Cheese Sandwich)

– 6 pieces of bread (preferred white)
– 4 cups of Cheese (I used shredded Colby Jack and shredded Mozzarella)
– 2 Chicken Breasts (Shredded)
– 4 slices crumbled Bacon
– 1 Avocado
– Spread of Butter
– 1/4 c. Buffalo Sauce
– Dash of salt and/or pepper

1. To shredded chicken, add 1/4 cup of buffalo sauce and crumbled bacon. Mix well and set aside. Add pepper or salt if desired
2. On oven-top, preheat pan to medium-high heat
3. While pan is heating, spread butter on one side of bread and set buttered side on pan
4. Let cook for about 3-4 minutes. Add shredded cheese to pieces of bread
5. Allow cheese to begin melting and then add buffalo shredded chicken mix
6. Add sliced avocado to top of chicken, sprinkle with a little more cheese, and top with another piece of bread
7. Let cheese melt and allow the sandwich to stick together
8. Once bread is browned on both sides, remove from heat and allow to set
9. Serve alongside chips (French fries)

Added ZEST:
I LOVE garlic aioli and am not sure why Americans have not realized the delicious value garlic aioli adds to just about everything (if anyone knows where I can find garlic aioli in America, please hmu) Garlic aioli was spread on both pieces of bread and then toasted to a golden brown crisp. SO GOOD (I did not add to aioli to list of ingredients because it is difficult to find in America)
This sandwich was 9/10 but would have been even better with some onion

This is a delicious meal to make when you want something great but also something relatively easy. It’s a great cheat meal, a great Friday night, and a great lazy day meal. Highly recommend next time you want all the good things: bacon, cheese and bread.
