  • 1 c. Greek Yogurt Plain or Vanilla, doesn't matter
  • 1/2 c. Milk I used oat milk, so really no preference
  • 1/2 c. Oil
  • 1 tsp. Vanilla
  • 1 c. Mixed Berries Costco giant frozen bag
  • 1 c. White Sugar
  • 2 c. White Flour
  • 1 tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • 1/2 tsp. Salt

  • Preheat oven to 425° (218°). Grease muffin tin and set aside
  • In a small bowl, add the wet ingredients (greek yogurt, oil, milk, vanilla). Mix well until completely combined
  • In a separate bowl, add all the dry ingredients (flour, sugar, salt, baking powder, baking soda). Whisk together with a spoon
  • Add the wet ingredients into the dry ingredients and mix together. Don't overmix, the muffin batter should be smooth but a few clumps is okay
  • Fold in the frozen berries
  • Pour about 1/4 c. size of batter into the muffin tins, place in oven
  • Bake at high heat for 5 MINUTES. Immediately lower to 350° (176°) without removing the muffins
  • Cook for an additional 15 minutes
  • Make sure muffins are cooked through, then remove from heat
  • Allow to cool (or not) before eating
  • Enjoy!
