Hey there! I have literally nothing to say except I made this muffin recipe last week and LOVED it and so I wanted to share it with all of you in a very nonchalant, unofficial way. Enjoy!

Eggless Mixed Berry Muffins
This is #4 in my eggless muffins series…they're just so yummy!
Servings 12 Muffins
Calories 156kcal
Ingredients
- 1 c. Greek Yogurt Plain or Vanilla, doesn't matter
- 1/2 c. Milk I used oat milk, so really no preference
- 1/2 c. Oil
- 1 tsp. Vanilla
- 1 c. Mixed Berries Costco giant frozen bag
- 1 c. White Sugar
- 2 c. White Flour
- 1 tsp. Baking Powder
- 1/2 tsp. Baking Soda
- 1/2 tsp. Salt
Instructions
- Preheat oven to 425° (218°). Grease muffin tin and set aside
- In a small bowl, add the wet ingredients (greek yogurt, oil, milk, vanilla). Mix well until completely combined
- In a separate bowl, add all the dry ingredients (flour, sugar, salt, baking powder, baking soda). Whisk together with a spoon
- Add the wet ingredients into the dry ingredients and mix together. Don't overmix, the muffin batter should be smooth but a few clumps is okay
- Fold in the frozen berries
- Pour about 1/4 c. size of batter into the muffin tins, place in oven
- Bake at high heat for 5 MINUTES. Immediately lower to 350° (176°) without removing the muffins
- Cook for an additional 15 minutes
- Make sure muffins are cooked through, then remove from heat
- Allow to cool (or not) before eating
- Enjoy!
