This one used the rest of the ingredients from my last Green Chef box, so not exactly a Green Chef recipe, but still using strictly ingredients and some of their directions; I give you: Quinoa Crunch Salad
Replace kale with lettuce or green cabbage
You can always just buy (I GUESS) pre-made crunchy chickpeas (garbanzo beans, literally same legume family) or add slivered almonds or croutons in place of the garbanzo beans, but I think the garbanzo beans really made it for me. That crunch – so good
I do not like tomatoes but needed another addition (also that color wow)…you could also try shredded carrots or red onion
I mean…YUM. In only 4 steps and about 30-minutes, you can make this delightful summer salad. It is healthy (minus my dressing of choice), it is easily versatile, and it is satisfying.
The crunch of the garbanzo beans and the texture of fluffy quinoa, just a great mixture of healthy, feel-good ingredients all in one bowl!

Big shout out to Green Chef, overall. They have been an amazing food delivery service and, despite the price tag, I get quality ingredients and new recipes that I would not be able to try otherwise (or even think of trying). It is a great way to mix it up and add some zest to your everyday dinner life
I am so happy to be back in my element after vacation – although I enjoyed all the burgers and fries and ice cream…I think my body is happy to be eating some better foods too.
