Welcome back and happy Friday!

Still lots going on in my personal life that it makes it difficult to keep up, but I am still trying!
I have not forgotten about my blog, I simply am out of words to write and brain power to create.
I THINK by the end of July I can share a little bit more about why my life has been so wild, but until then, here’s a little peak into what’s been going on:
– My BABY sister (yes the same one that graduated last week) has moved into her college dorm in Rocklin, California. I don’t know if this makes her an official adult…but she is out on her own (good luck)
– I took a second job! I work as an office assistant full-time for the Department of Behavioral Health and now I am also a part-time virtual assistant. If you know me, you should know that my DREAM is to work from home. Taking this position is a step in the right direction, so I am excited to see where this opportunity leads
Now, onto this recipe: Hawaiian Fried Rice (because pineapple, duh)

ADDED ZEST:
For traditional Hawaiian flavors:
Add ham or spam in place of the chicken
Add an over-easy egg to the top for added protein and flavors
A few things about the food I use:
Yes, I use frozen veggies (as per the picture). They stay fresh longer which means I can buy them in bulk and they are the perfect serving size for two people. I usually splurge for the organic variety because they tend to be nicer quality and don’t have added preservatives. If I know Blake and I are home every night and that I’ll be cooking, then I will buy fresh veggies, but this is a rare occasion.
Yes, the rice is sticky. Brown rice and I are not friends. I ALWAYS either add too much water or overcook the rice so it turns out sticky. While this not bother me, it does make for a difficult stir fry just beware (or use white rice)
