Italian Turkey Meatballs with Parmesan Roasted Tomatoes

I am finally back to posting twice a week. Last week I finished my instagram!! (@claireslemonzestlife), so I was really focused on launching the page, working on the design I had in mind, and creating even more zesty recipes.

The more I am blogging, the more I am realizing consistency is KEY and any time I make a new recipe or try something different, I make sure to write it down.

In my drafts I have at least 10 different recipes that I am testing and tweaking to make sure they are PERFECT when I finally post them. I am so excited to share with all of you the recipes I am working on, but first, an Italian classic: meatballs and pasta (with added ZEST).

Ingredients for Parmesan Tomatoes and Pasta:
– 2 cups of Pasta
– 3 Tomatoes
– 1/2 tsp. Pepper
– 1/8 tsp. Salt
– 1/4 tsp. Italian Seasoning
– Sprinkle of Parmesan
– Drizzle of olive oil

Directions for Pasta and Roasted Tomatoes
1. Preheat oven to 350°
2. Cover a baking sheet with aluminum foil and spray with non-stick spray
3. Preheat stovetop to high heat and add pot of water
(Ratio: 3 cup of water: 2 cups of pasta, 2 cups of water: 1 cup of pasta, etc.)
4. While both pot of water and oven are preheating, prep ingredients
5. Slice tomatoes into tiny quarters and place on tray
6. To tomatoes, sprinkle with Italian seasoning, salt, and pepper
7. Place in oven
8. While tomatoes are cooking, add pasta and a pinch of salt to boiling water
9. Allow both the tomatoes and pasta to cook for 20 – 25 minutes
10. Once tomatoes are finished, they should appear dark red to orange in color and still hold their shape, despite being slightly squishy. Sprinkle with Parmesan once done
11. Work on meatballs

Ingredients for Meatballs:
– 1/2 lb. Ground Turkey
– 1/4 tsp. Onion Powder
– 1/4 tsp. Garlic Powder
– 1/4 cup Bread Crumbs
– 1 Egg
– 2 heaping tbsp. Parmesan Cheese
– 1/4 Sautéed Onion (In a pan for 5 – 8 minutes, drizzle olive oil and a bit of barbecue sauce and sauté onions until golden brown and slightly crisp)
– 1/2 tsp. Italian Seasoning
– 1/4 tsp. Pepper
– 1/8 tsp. Salt

Directions for Meatballs:
1. Increase heat on oven to 450°,
2. In large bowl, add 1/2 pound of ground turkey
3. Add Italian Seasoning, onion powder, garlic powder, sautéed onion, 1 egg, bread crumbs, salt, pepper, and Parmesan cheese
4. Mix with hands
5. Once completely mixed, roll into balls
6. On baking sheet, cover with aluminum foil and spray with nonstick spray
7. Spread meatballs evenly apart on tray
8. Place meatballs in oven for 20 – 25 minutes, until completely cooked through (you should be able to tell by slicing one in half)
9. Allow to cool

Once all ingredients are complete, add pasta to bowls and top with roasted tomatoes and meatballs.

For added ZEST: Use Zoodles in place of regular spaghetti and add spinach to the meatballs for extra flavor and vegetables (if you are into that)
