Welcome back to another zesty week!
With the completion of May I feel like I can finally BREATHE again. While I enjoy the break, a flaw (or strength) in my personality is that I love to be busy (but only with things I like).
Blake goes home to Australia FOR A WHOLE MONTH and while I am upset, I want to take the time to focus on all the things I can do better. June is about committing to the gym, writing more recipes, getting more sleep…
These summer months are going to be HUGE, I can already feel it. I have lots of exciting news and updates that I cannot wait to share!! But until everything is settled down, I will have to leave you all hanging.
A few things I can update everyone on:
1. My BABY sister graduates from high school on Thursday, what even is that?! She is also moving to Sacramento literally two days later. UGH! How time seriously flies.
2. I deferred my Master’s program to really make sure that the program is something I want to pursue and that the path is something that will help me further my career. I might have been scared to do so, but it felt good and just the right thing for me to do right now
ANYWAY onto this chicken recipe because seriously?? LEMONY GARLIC BUTTER I die
DISCLOSURE: If you add too much lemon, it will taste kinda of…soapy. The garlic and butter and lemon make a delicious and refreshing marinade if it is the right combination. Just a warning
This chicken marinade is light and refreshing – even with the butter. The chicken cooks better without all the excess butter, so most of it does not get used; but, the flavor is still cooked into the chicken. SO YUMMY and it makes your kitchen smell like a lovely combination of butter and garlic
