Hello from sunny (and smoky) Australia!
I migrated here in the beginning of December 2019 and I LOVE it. This is the first city that I’ve lived in that truly feels like home: being near the ocean, living close to the city, taking the train, walking to new cafes, etc.
I am currently trying really hard to find a job and find a routine, and so I thought I would get back into blogging and cooking – especially now that I am settled in.
The holidays were ROUGH. Not only being away from my family for the 2nd year in a row, but also the amount of food I consumed was…absolutely insane. I am now on a bit of a health-kick trying to get back on track.
Part of this is eating a consistent 3 meals a day again (instead of, yanno, the one giant meal in the middle of the day and then just snacking and drinking until I fall asleep).
I decided to get back to my roots and start all over with these 5 Overnight Oat recipes – because as long as you have a great base, you can basically never go wrong with Overnight Oats.
**If you want less: add 1/4 – 1/3 c. of oats instead of a full 1/2 c., then add 2 tbsp. of yogurt and milk (add to texture: more milk/yogurt is more runny, less is more thick)
I also use Coconut Yogurt and Oat Milk for my personal preference – making this base VEGAN; but, you can use whatever yogurt and milk makes ya feel good
(dairy is not making me feel good momentarily so I am staying away from it)

I had Overnight Oats 5 days this week and it was perfect, not that I was busy in the mornings – but it saved me having to think of something to eat and also saved me buying breakfast out.
I also felt so much better eating the serving size I did – it was a nice balance of carbs, protein, and fruits that kept me energized throughout the day.

I am currently meal-prepping every day, so I am not really cooking extravagant meals (see: chicken and rice for literally. every. meal. – however, once I explore some more on Pinterest, get some inspiration from the new culture around me, and do some planning, I will be back with new recipes!
