Hello Zesties!! Excited, as usual, to bring this week back with a new recipe.

After a weekend of pizza and chicken and chips (which is tradition on Saturday and Sunday), I knew I had to make something healthier to get back on track and start the week off right. Also, this recipe is a signature because it is similar to P.F. Chang’s Lettuce Wraps. Of course, nothing will be as good as getting them direct from P.F. Chang’s, but this will suffice as we don’t have a P.F. Chang’s in Australia.
Blake and I also went grocery shopping for the first time in 2 weeks and you should all know I absolutely despise grocery shopping. Maybe it’s because there are too many people outside now that obviously have no idea what they need and wander aimlessly about the grocery store or maybe it’s because I am tempted to buy all the snacks. But for me, I have a list I have to stick to it (sorry snacks), I like to get in and get out in less than an hour – if I am extremely lucky 30 minutes. Not that I have anything better to do, but because I hate grocery shopping.

ANYWAY. I digress. Let’s get to this recipe.
This recipe is filled with all the good stuff: chicken, cashews, teriyaki sauce, carrots, lettuce…I meant good as in good for you. Eating this meal always makes me feel slightly lighter and satisfied. Add in the cashews for some crunch (or omit completely if preferred) and the carrot slaw adds some nice crunch and flavor and beautiful color.

INGREDIENTS – Lettuce Wraps
- 1/4 c. Cashews, chopped (I did this by placing cashews in a plastic baggie and then using a rolling pin to chop it down)
- 1 kg. Chicken Mince
- 3 tbsp. Teriyaki Sauce (not marinade or glaze)
- 2 tbsp. Hoisin Sauce
- 2 tsp. Garlic Salt
- 1/2 tsp. Salt/Pepper
- Sprinkle of Brown Sugar
- 1/2 Iceberg Lettuce, just the leaves
INGREDIENTS – CARROT SLAW
- 2 Carrots, shredded
- 1/2 White Onion, chopped
- 1/2 Purple Cabbage, chopped
- 1 tsp. Sesame Oil
- Sprinkle Salt/Pepper



HOW GOOD DO THEY LOOK?! So bright and refreshing and satisfying. This is a great summer recipe for dinner and I highly recommend adding this into your dinner/lunch rotation. Even though it’s not summer here, it is still a great recipe to have and it is so easy to make! Also, it saves really well. Of course, the chicken and the slaw. I actually used the carrot slaw the next day on top of teriyaki meatballs (COMING SOON 👀)
