What I Eat in a Day: Quarantine Edition

Hello Zesties! I am bringing this blog post back with a few announcements (all good things, all good things)

First thing: I deleted my Lemon Zest Life Instagram profile. I put a lot of work into my other personal profile, and it was hard to look at both things as ‘separate.’ I love making food, I love posting about it, I love talking about it, so it did not make sense to keep them separated. I was just reposting the same thing on both profiles anyway so find the new profile here: Claire.Lemos

Second thing: This is turning into more of a personal/lifestyle/food blog. Little bits of everything and intel into my life, if you don’t like it (which I highly doubt and hope you really really do like it), you can still continue to find any recipes I make on the recipe page: HERE

Second thing: Just checking in, how is everyone doing? Is everyone eating? Is everyone OVEReating? (because same)

The best plan of approach to overcoming this initial binge-eating phase was actually so simple, it practically made me want to restart this iso/quarantine thing all over again.

To give you some insight and inspiration, and to hold me accountable, I thought I would share what I (typically) eat in a day (except for Saturdays or Sundays, depending on the occasion).

9:30 – 11am:

A few things, because breakfast is my favorite meal of the day: either overnight oats or chia seed pudding or sometimes just a protein shake and piece of toast.

Chocolate Oatmilk Overnight Oats

1:30 – 2pm:

Next I typically have lunch. By midday I am either in the middle of a workout or on a walk or planning on doing those things later or looking forward to dinner, so I tend to keep it light. Eggs on toast with avocado or just chicken and rice.

Paprika Chicken with Rice and Guacamole

3:30 – 5pm:

Snack time! It is important for me to have ready-made things around the house because I tend to be a bit of a ‘grazer.’ Yet, I try to keep it raw and healthy and wholesome. Snacks are usually an apple with raw nuts, or an apple with another fruit (kiwi or orange), or a little coconut yogurt and raw granola…popcorn on occasion as well.

6 – 7:30pm:

Dinner tends to be the biggest meal of the day, and by biggest, I mean by flavor. This is when I do the most experimentation in the kitchen and really get to try new things. I tend to make dinner 4-5 days per week (depending on my mood LOL)

Deconstructed Taco Bowl

I am trying my absolute best to make sure I am still eating healthy and wholesome. It is hard to have some self-control when I am stuck in the house surrounded by food, but I really do try my best. I hope posting what I am eating helps you get an idea of what to eat or find some motivation for good foods. This is a really opportune time to try some new things in the kitchen or find your favorite takeaway…again it is all about balance.

Make sure you follow the new instagram, I am planning on posting new recipes throughout the week from dinner to breakfast to my favorite dirty chai. I am really excited to combine my lifestyle page with my food page, bringing more routine and sense.

Thanks for following along.
